Another wine from the heart of the Languedoc, winemaker Guillaume Letang oversees the Boutinot properties in southern France & has crafted a totally unique summer white that blends the lightness & freshness of Picpoul & the complexity & fat richness of Roussanne. The juice is fermented in stainless steel at low temperatures for freshness & aged for 6 months on fine lees for complexity & texture.
The wine is all about intensity & freshness. Aromatics of white flowers are lifted by a bright & lively acidity giving a wonderfully refreshing finish. The zippy fresh green fruit & citrus of the Picpoul combines beautifully with the herbal notes & lift of the Roussanne. This is yet another fine example of the innovative spirit of winemakers who find grapes that are collectively compatible & reinterpret white wine!
