From manager of a wine bar in Quebec to rising star in Chablis, Patrick Puize hand harvests his fruit & picks earlier than most growers in order to retain a nervy & acidic backbone for his finished wine. His vineyards are all within the original 12th century boundaries of Chablis where all of his cuvées are sourced from the iconic Kimmeridgian limestone -- the unique terroir rich in fossils responsible for the stony complexity of world class Chardonnay from this region.

None of his 20 cuvées are alike. Patrick is one of the rare producers to identify nuances from village to village in the Chablis AOC. This wine is bright & precise and captures notes of citrus, stone fruits, and white flowers over a core of oyster shell salinity & racy acidity!
