Edna Valley is a small cool climate pocket in the Central Coast of California. Tolosa purposefully maintains the freshness of this Sauvignon Blanc by hand-picking the grapes in the early morning hours before dawn and fermenting it at very low temperature. It was aged in tank, on the lees, to accentuate richness in the mid-palate. The intricate mouthfeel primes this wine’s dual capability of being the ideal refreshment on a warm day, while pairing nicely with an array of foods.
