"Il Censo's flagship wine, “Praruar” is pure Catarratto produced in Gaetano’s Bea-
influenced staunchly non-interventionist style: a natural fermentation on the skins for several weeks with no temperature stabilization, and aging in stainless steel for several years so that the wine settles naturally without fining of filtering.

“Praruar” means “toward gold” in the old Sicilian dialect, and this bottling’s extended period of skin-maceration helps it live up to its name. Fresh-baked gingerbread, citrus honey, quince paste, and church spices (myrrh, frankincense) envelop the taster in a warm embrace, and the palate delivers mass and intensity without undue weight or alcohol. Praruar is thickly textured—almost like chicken stock in its concentration of savory essence—but notes of chamomile and preserved lemon keep things relatively fresh."
