The crop of Citra & Idaho 7 we are using this year pair beautifully against the dank tropical notes from enhanced thiols. We pick up a very prominent flavor of grapefruit and passionfruit 🏝
How does it all work? Through some clever gene editing, Omega’s thiolized yeast gets to work & 'biotransforms compounds found in malt and hops to unleash thiols — flavor- and aroma-active compounds reminiscent of grapefruit, passion fruit, and guava'."
