Dominique Hauvette moved to Saint Remy de Provence in 1988 where she made her first harvest with only 2 hectares of vineyards. Today, the estate is still relatively modest, with 16 hectares in the appellations Les Baixas- de-Provence and Vin de Pays Des Alpilles. It is in the IGP Alpilles that experimenting with diverse grape varietals and alternative vinification methods are not only condoned, but encouraged.

Domaine Hauvette has embarked on breeding her wines in egg tanks. These are cement-free eggs where acidity and limestone can claim their ying & yang! The wine is aged for 1 year on its lees in the eggs where the impact of the clay limestone terroir is fully manifested in this lively mineral cuvee.
The wine is round and deep with a creamy and toasty lees influence, a touch of herbaceous, and notes of strawberries, lemon, and grapefruit zest!
