Pares Balta was founded in the 1930’s but the family has been involved in wine making in the Penedes, Catalunya region of Spain since the mid-1700s.The winery embraces tradition & innovation and under the dual winemaking attack of Marta Cases & Maria Elena Jimenez they’ve created a still wine using the primary grapes of Spanish Cava -- 47% Parellada, 31% Macabeu, & 22% Xarel-lo. The grapes are fermented separately in stainless steel.
The wine bursts with ripe pear & apple on the nose with lemon & citrus zest and a hint of minerality. On the palate there’s juicy orchard fruit along with a chalky saline finish. More texture & aromatics than Pinot Grigio, less body than Chardonnay, & a totally unique flavor profile reminiscent to Sauvignon Blanc.
