After a 1-year hiatus, this fan favorite is back. PEAR is a 60/40 blend of pear and apple, and is the closest thing I make to an off-dry or semisweet cider. It consists of low acid dessert pears combined with a medium acid apple blend heavy on Liberty, with a few Ellis Bitter thrown in to spice it up. The combination of low acidity and a touch of residual sweetness (coming from naturally occurring sorbitol found in pears) yields a luscious, super-drinkable pear treat. Simply crushable on a hot summer day!
