100% Malbec from Cahors, France.
Cahors is a region of extremes - hot summers and wet, cold winters - producing big chewy wines, primarily Malbec and Tannat, over the ages. Malbec is also known as Côt or Auxerrois, particularly in Cahors. Julian Ilbert and his wife Sophie have set out to modernize the image of Malbec while still retaining its original attributes.
The fruit from their 100% Malbec is from 7 different vineyard sites around the town of Cournou, hand-harvested, destemmed, with 20% pressed as whole cluster fermentation for 12 days of maceration. The winery is ECOCERT certified organic since 2013 and it has farmed without chemicals for decades prior.
The wine is dark and brooding with concentrated blueberry flavors and notes of licorice, cassis, green herbs, and a hint of cocoa.
