Mixed Culture Field Beer - 5.0% - Brewed w/ Carrot & Squash - Aged in Sherry Pipe
From the brewer: This is one of the oldest beers I haven’t yet released. This started as a brew in January of 2021, the first month of production at the brewery. It’s a crazy idea that finally has come to fruition. I shredded around one hundred pounds of organic carrots (mostly) and squash and lacto-fermented for several days before adding to a mash. This beer was coolshipped overnight and fermented in puncheons. After several months I packaged half of it (see below) and moved the other half into my (then) newly acquired sherry pipes to age for several more months. This is the result. It has much of the original field-beer funky carrot sweetness with a dose of the vanilla deeper wood tones. I think this is a great beer for autumn. Lots of rich character, perfect for holidays and other fall pleasures.
