"This iconic pétillant of Chenin Blanc is always one of our favourite expressions of the genre. The grapes were pressed directly and the wine began fermentation in cuve before being transferred to bottle, where it spent around a year on lees before disgorgement. A gorgeous, hazy shade of gold, it is crisp, lean and mineral, with delicate notes of green apple and chalk giving way to a clean, salty finish. A formidable apéritif."
