Making wines alongside an active volcano might not be everyone’s calling but Mimi Constanzo committed to this crazy dynamic environment in 2010. Located in Santo Spirito on the edge of Parco Naturale del Etna, a UNESCO world heritage site, his vineyards benefit from the fertile volcanic soils and rainfall and snow melt from Etna that is 10 times that of the rest of all Sicily.
The grapes - 70% Carricante and 30% Catarratto - are hand-picked with a soft pressing and fermented in stainless steel for 4 months with the lees and 2 months in the bottle.
The wine is fresh and vibrant with a fragrant bouquet that’s rich in citrus fruits. There’s plenty of minerality that blends beautifully with the notes of Mediterranean herbs.
