Corpinnat is a rebellion from the DO of Cava - which has a reputation for cheap wines and has strict rules that don't necessarily serve the wine. All Corpinnat wines must be organically farmed, hand harvested, and aged for 18 months on lees. This wine is 100% Xarel-lo, one of the main grapes used in Cava, but rarely not blended with something else.
