Approximately 75% Merlot, 25% Cabernet Franc grown on south-facing limestone and clay slopes. For me, this wine is a perfect balance of the fruit vs. the earth. My Merlot leads with a medium-weight-mouth-filling-fruit and my Cab Franc contributes the earthy tones and tannic length of the wine. The oak is a background detail (I am a firm believer in using oak just to take the edge off, not to impart flavor) so while the tannin is
subtle, the use of oak is not flavor driven. On the exhale is where I note the barrels contribution most. Pairing Note: I’m perfectly happy sitting on a couch sipping this on its own without food, but a little salt and fat really helps to bring out the flavor. Cheese, charcuterie, risotto; things that take a long time to cook...
