"This wine is the Boulard's entry level Champagne. It comes from six small parcels of Pinot Meunier spread through the Vallée de la Marne. They are the Boulard family's orginial historic land.
“Les Murgiers” are the local, traditional vineyard walls built from river stones dug up to make way for planting (and alternatively spelled murgets, murgers, meurgers or meurgiers).
Each parcel is vinified individually. The hand-harvested bunches are gently pressed, and only first-press juice is used. It is fermented spontaneously with indigenous yeasts and continues aging in Burgundian barrels. The wine undergoes malolactic fermentation and remains on its lees with periodic batônnage in accordance with the lunar calendar. It is bottled on biodynamic “fruit days”.
The sur lattes élevage varies but is around 24 to 36 months.
The wine can be bottled Brut Nature without dosage or Extra Brut depending on the vintage. S02 is only added at press in very low doses."
