Daniel-Etienne Defaix owns one of the most ancient estates in Chablis (eight centuries for the Vieux Château) For four centuries, Defaix family are winemakers from father to son. The family estate is located on the most ancient terroirs from Chablis, where monks on Pontigny made a selection one thousand years ago to create the Chablis Appellation. The domain is 28 hectares, planted with Chardonnay on a typical soil called "kimmeridgien" with a lot of oysters fossilized inside. This cuvée is sourced from vines the age of which is between 45 and 70 years. A wine of exceptional concentration for a village level appellation, this wine is always a true expression of the kimmeridgian soils that make Chablis so distinctive. Aged for thirty months before release, Defaix’s old vines Chablis is and long mineral-infused finish. Estate fruit, native yeast primary & secondary lasting up to two years, 12 months on the lees, aged in stainless 3 years before release, vegan.
