Mary Taylor’s mantra is to "think outside the grape," focusing on small sustainably-minded winemakers who select terroir that is uniquely suited for the grapes they grow.
Winemaker and owner Adrian de Pablo melded his background in biochemistry and his family’s 50 year old history of winemaking and carefully monitors the ripeness of grapes around harvest and uses minimal intervention to coax out the lush fruit flavors while maintaining their vivid acidity. The vineyards are located in the dry plains of the Castilla La Mancha so the dramatic diurnal temperatures, along with the largest aquifer in Spain directly underneath the vineyards creates an unmistakable expression of the unique terroir.
The wine is 100% Tempranillo and beautifully structured with a backbone of soft, chewy tannins and plum and cherry flavors galore. Great at room temperature or chilled!
