Knorhock is a Certified Heritage Vineyard farm dating back to 1694 and located in the Knorhock Valley in the Simonsberg area of the Stellenbosch, a location famous for its Cabernet Sauvignon and Chenin Blanc. The Gaiduk family purchased the property in 2012 and decided to keep things simple and focus on only those two varietals. Winemaker Schalk Opperman and viticulturalist Nico Wallers have elevated the winery to global prominence in a very short time.

This cool Cabernet Sauvignon is fermented in a mix of stainless, oak, and concrete where the wine remains in contact with the skins 21 days after fermentation. The wine then sees two years in oak and one year in the bottle before release. Cassis, cranberries, leather, and cherries merge with a flintiness creating a unique cool climate interpretation of this iconic varietal.
