Despite Burgundy’s popularity, in the 1990s & early 2000s the wine community went through an uneven period where many of their red wines were made with too much new oak & extraction. In the last decade things have really turned around with producers getting recommitted & upping their game.
Jean-Marc Pillot is at the top of the list! Jean-Marc is blessed with some of the finest plots in the Chassagne Montrachet. In the past he would use too much battonage (frequently stirring up the lees in the vat). This method added richness to the wine but could cause premature oxidation as well. At some point he had an epiphany & stopped battonage altogether to make a wine in a more reductive style. The results were dramatic, producing a succulent & exuberant wine with wild berry fruit, vibrant silkiness, & energetic tannins, but all in a lighter bodied style!
