100% La Crescent from Vermont, USA.
Iapetus is the name of the ancient ocean that once covered the Champlain Valley and the term for the resulting geology in the valley that has evolved over time. Ethan Joseph, winemaker and founder, in collaboration with Shelburne Vineyards and Eden Ciders, harvest their La Crescent from two vineyard sites -- one below Mount Philo, the other at the Ellison Estate Vineyard’s site on the Grand Isles.
La Crescent is used because it’s a cold hardy hybrid grape suited to Vermont weather and is disease resistant. Ethan believes that no sulfur or chemicals should be used in the process to “correct” things, and the juice macerated on the skins for about 40 days. After maceration 80% of the juice sees neutral oak with the remaining 20% going into stainless steel tanks. After 7 months the lots are blended.
Ethan refers to the wine as “a wild and magical creature” -- the aromatics are mesmerizing and the apricot, peach, and floral notes complement the vibrant tartness perfectly!
