Bondle began a few years ago when founder Duyen Ha left New York to attend culinary school in Paris. She has worked as a chef in some of France’s most renowned restaurants and wanted to bring a curated collection of French wines to pair up with her cuisine. She partnered up with Sommelier Virginia Bonnet and together they created a partnership with a select group of winemakers throughout the country.
Monial was their choice for Champagne. Monial has a rich history dating back to the 12th century when it was founded by the Cistercian Monks of Clairvaux Abbey. The vineyards were planted in the 14th century. The current winemaker is Marina Chevalier who took over from her father in 2016.
The wine is a blend of 90% Pinot Noir and 10% Chardonnay with zero dosage. Elegant and lively, this champagne is a treat to the senses. The flavors are crisp and clean with notes of green apple, lemon zest and a slight nuttiness in the finish!
